After a magical overnight stay in Momo Beach House, we were transported to Amorita Resort in Panglao. But before I give you the 411’s of their infinity pools and a secret cove, let me briefly take you to Spain. Tomar Tapas x Bar is one of Amorita Resort’s restaurant, where you’ll feast on comida Española.

Croquetas y Paella, Amores De Mi Vida

We started our lunch with a variety of appetizers, from pinchos platter, to croquetas and chorizo al vino. Croquetas were my instant favorite. We had chorizo, vegetal (vegetables) and mariscos (seafood). But whether it had meat or not, it was heavenly! If not for the fact that I was eating with other guests, I would’ve ordered 5 more plates and eat them all. THEY. WERE. THAT. GOOD. Crunchy on the outside and creamy on the inside, it packs an explosion of flavor in each bite. I can not recommend them enough.

I’ve met my paella-love-of-my-life last year in Lourdes, France. A town bordering Spain, which kind of explains why they have great paella. Since then, I’ve often compared whatever paella I ran into with the one I’ve had in Lourdes. I was excited when I learned that we’ll be having some for lunch. At first, I was blinded by the memories of my first love and refused to believe it’s just as good. However, I couldn’t resist and had to take seconds (even a third helping). Some are drawn to the crust part of paella, but I love the middle when you can still see the sauce but barely. Just enough of a tease of the flavors. Paella valenciana will always be a favorite of mine, but I also got to try paella negra or squid ink paella. It’s also creamy and flavorful. If you love seafood, then this paella is for you. The squid ink is not overwhelming, except for your teeth color, haha. So I suppose that’s the only downside of eating anything with squid ink.

Postre

Lastly, we were served churros with chocolate dip. As you may all know, I’m not a fan of chocolate, so while they’re munching on them fried-dough pastry, I was still having some of my paella. I’m sure it was nice, as I don’t think you can go wrong with chocolate.
