Yes To Healthy Eats At Shangri-La’s Global Wellness Day 2017

If you’re following me on any of my social media accounts (Instagram, Facebook) then you’ll know I spent a weekend away in Shangri-La Mactan Resort & Spa. If you’ve followed me since my early days of blogging, you’ll also know how it is home to most of my style posts. It was beyond exciting to be invited and work with Shangri-La, a place I genuinely love and have been my go-to for a city R & R.

For years, Global Wellness Day has been celebrated around the world, 73 countries as of 2015 and has continued on up to present day. This year, on June 10, Shangri-La invited me, among others, to celebrate healthy lifestyle, get involved in fun fitness activities and be delighted by appetizing but sustainably-farmed food.

Healthy Plates at Acqua for Dinner

To kick off the weekend, we had dinner at Acqua with a menu highlighting healthy and sustainable ingredients by Chef Andrea Burzio.Β To say that I was impressed by Chef Andrea’s works is an understatement. This has been one of my highlights that weekend because of the surprise each plate offered.

Teased with the softest bread which packs a crunch with its crust which we dipped in balsamic vinegar or tomato puree. We then proceeded to have the most filling, no-meat meal I’ve had in my life.

Insalata di Pomodori Bio Feta. Naturally-farmed tomato, crumbled feta cheese, cucumber, Kalamata olives, arugula, capers, balsamic and extra virgin olive oil.

Bursting of flavors and crunch, this had the juiciest tomato as the focal point. The feta cheese helped balance the tanginess and strong flavors of balsamic, olives and my favorite green, arugula.

Passato di Verdura e Ricotta. Vegetable veloute recipe by Chef Andrea’s grandmother made using homemade ricotta.

A favorite that night, it was not hard to fall in love with the homemade ricotta and the creaminess of the veloute. It was hearty and will make you crave for some more.

Tortelli Alla Zucca. Handmade tortelli stuffed with pumpkin, saffron reduction, caramelized walnut and watercress.

Our main course for the night had me in amazement as it made me discover how caramelized walnut works well with pumpkin. Two different flavors coexisting beautifully in your mouth!

Macedonia Di Frutta e Gelato. Vanilla ice cream with locally-sourced fresh fruits marinated in lemon, sugar and mint leaves.

Thankful it wasn’t chocolate and thankful the mint can be easily taken out of the equation. This vanilla ice cream was the truest vanilla I’ve had, if that’s even a thing. You can still see small dots from, what I can only assume, vanilla pods. The fresh fruits it was sitting in created a contrasting flavor to the vanilla, so they complimented each other well.

Organic and Sustainably-Farmed Ingredients for Breakfast at Cowrie Cove

We woke up early the following day to find ourselves in the midst of another healthy offerings. From fresh fruits to fresh salmon, from organic tomatoes to green smoothies, a variety ofΒ hors d’oeuvres including the yummiest king prawns, it was a guilt-free buffet to perfectly start a day of wellness activities.

Acqua’s Global Wellness Day set menu is at Php 1500 per person and Cowrie Cove’s is at Php 1750 per person.
